With the mouse cursor over the box, you can hold CTRL + Mouse wheel to adjust it.

Many fields in FG are modified in this manner.

Indeed, but they usually have a little + icon above the field. I suspect that when the MM comes out there'll be a different or at least more obvious method of doing this since I also suspect that many NPCs will have bonuses to their saving throws which isn't the case with anything in the PHB.

Firstly, what Zacc said.
Secondly, With respect, I'm not some random newbie who doesn't know his way around the interface. By far quite the opposite. And yet, I got stuck on this. And just one hour before encountering this difficulty, I actually used CTRL-wheel to adjust a PC's speed. And still it didn't occur to me to do it in the NPC field. Okay, maybe I failed my intelligence check. Fair enough. Still doesn't make this particular element intuitive.
I'll be the first to say that FG is not as difficult to use as some make it out to be. That doesn't mean that everything in it is straightforward.
